This sounded like such a good recipe but was gross because the instructions say to use 3 cups water with 1/4 c butter for the stuffing. I knew better! But I followed the directions. Mush on top of the chicken mix. Gross!
White Spot Chicken Broccoli Recipe
And today I'm teaming up with some of my favorite food blogging friends to share casserole recipes of all sorts, including this cheesy chicken broccoli and rice casserole, so be sure to keep scrolling to the end of the post to get all the casserole inspiration you need!
With a vegetable, protein, and starch, this chicken, broccoli and rice casserole is a complete meal in one dish. And while many casserole recipes call for cans of cream of something soup, I skipped it in favor of making a super simple from scratch version for the sauce.
Then the rest of the dish is mostly about assembly. You could either layer everything into a casserole dish, starting with rice, then the shredded chicken, broccoli, sauce and cheese, or mix it all together.
Or picking up a rotisserie chicken from Costco. It just makes life that much easier. It also makes it super easy to double up your cooking and assemble more than one chicken broccoli and rice casserole at once if you need to take a meal to a friend in need of a helping hand or some comfort.
I have been looking for a casserole recipe that doesn't use "cream of" soup and this is it! Love that I can also use a rotisserie chicken for an easy weeknight meal. Can't wait to try thank you so much for this recipe.
I have to admit I have never written a comment on any other recipe but this was so delicious I just had to. I made it exactly as the recipe stated except I cut it in half. I make a side dish that is similar in taste just without the chicken. It has rice, broccoli, mushrooms, onions, celery, cheddar cheese and the dreaded canned cr. of mushroom soup. I will never make that again using canned soup! Your homemade version will now be used in all my recipes calling for canned soup (not that there are many as I try to avoid it). Thanks so much for such a great recipe. I can also see the possibility to add extra ingredients (mushrooms!).
Freezer-friendly, curried chicken and broccoli casserole has been making people happy at the dinner table for decades. The vintage classic chicken bake has gotten an upgrade, though. No canned soups or packaged mixes in this Chicken Divan with Curry. Just good, real food.
The frozen broccoli turned out extremely mushy and over cooked the first time I tried this recipe. So, the second time, I used fresh broccoli instead. I blanched it first, drained it thoroughly and then spread the pieces out on a towel so it drained even more. Then I added it to the baking dish. Perfect!
This casserole is perfect for those busy weeknights and just as good the next day at work! The classic as the combination of chicken and broccoli is perfect in a stir fry and of course in this casserole.
Chicken broccoli noodle casserole can be made with a variety of different pasta. Why not try penne, rotelle, bowtie, or cavatappi? Choose heartier types of pasta that can hold their own with chicken and broccoli.
During the week, I love to make easy dinner recipes that can be thrown together and made in no time. This broccoli casserole is one of my top picks, along with one pot goulash, slow cooker honey chicken and taco soup.
What I love about this chicken broccoli cheese casserole is that it bakes in one pan and can easily be prepared ahead of time. So all you have to do is throw it in the oven later in the day! Scroll down for the printable broccoli casserole recipe.
I used a frozen steam bag of broccoli florets. I only microwaved the bag for a couple of minutes and then transferred them to the dish with the rice. Just wanted to take the frost off a bit. Simple recipe and turned out great!
This KETO CHICKEN BROCCOLI CASSEROLE is extra cheesy and bursting with goodness. My whole family loves this mixture of creamy, cheesy broccoli and juicy chicken. This casserole is ready in less than 30 minutes!
Rotisserie chicken, leftover cooked chicken, or the frozen chunks of grilled chicken you can buy at the store all work well in this recipe. If you using frozen chicken, thaw before adding to the casserole.

Made this last night. Came out perfect! After rice and chicken were cooked, there was some extra liquid. I strained it and added a little flour to thicken. I added my cooked broccoli at the end and then added the extra broth. Might add carrots next time also.
You can certainly cook the meal ahead of time and re-heat throughout the week. I suggest cooking the broccoli one minute shy of the instructions so it can maintain some crunch in reheating. To reheat use a microwave at half power for 1-2 minutes to prevent overcooking the chicken or the broccoli.
Quick Teriyaki Chicken Rice Bowls feature sweet, garlicky chicken served with rice and steamed broccoli that comes together in just 20 minutes. Better than takeout and made with just a few ingredients, this Asian chicken dinner idea is on our weekly rotation!
I kept the dish simple and steamed broccoli and cooked rice. You can follow my recipe for cooking rice on the stovetop or use the Instant Por rice recipe. You can turn this dish into a stir fry by cooking veggies (peppers, onion, garlic, mushrooms, carrot sticks, etc.) in the pan first, then followed by chicken.
GOODNESS!!! I made this tonight exactly as written and my family loved it, including my 13 month old grandson. It was delish! my husband and son are asking that I make this on a regular basis. Thank you sooooo much for sharing this yummy chicken recipe!
Made this sauce ahead of recipe... did not care for it; wanted more of the teriyaki flavour ... so i tried your teriyaki sauce with this recipe. Much better! I added some garlic powder and cornstarch to the chicken before I pan-fried and it turned out great (only used 1/2 teriyaki recipe) and I sprinkled some sesame seeds on the chicken before serving. Keeper, for sure!
I am not a fan of teriyaki sauce at all. However my boyfriend and some friends love the stuff so I decided one day to try it and boy oh boy was it delicious! I did add a little more brown sugar than called for and added 2 tablespoons of honey but I was cooking 2.5 pounds of cubed chicken. However can you please tell me what to do to keep it with a little more sauce it coated well there wasn't any juice or sauce left. Thanks for sharing your recipe I look forward to trying out some of your other recipes now.
Made this today but had to sub some items, didn't have any soy sauce so I used terakia sauce. I doubled the sauce recipe, but only used 1/4 c terakie sauce and used 1/2 can chicken broth. I also put some red pepper flakes in it with some red pepper raspberry chipotle sauce. It was so good. I also cooked my vegetables in separate pan. Added meat to sauce. It was so good.
I was nervous about trying an Asian chicken recipe because I've made some bad orange chicken and honey sesame chicken before, but my husband and I loved this!! I loved that I had all the ingredients for the sauce and didn't have to buy any bottles of things I won't use again. delicious! Making again!!
I don't ever comment on recipe posts - but I had to share with you how much my family loves your recipe. We make it WEEKLY. There are never any leftovers, and my husband literally scrapes all of the sauce out of the pan. Not only is it flavorful, but it is so easy to make. We use Boil in a Bag Jasmine Rice, and microwaveable broccoli - and its an easy weeknight dinner meal. Thank you so much for sharing!
This week I decided that I would try all new recipes for dinner, all found on Pinterest. One was terrible, a couple were okay, and this one was out of this world amazing! Everyone in my family loved it! My 10-year-old daughter liked her broccoli as long as it had some teriyaki sauce on it. I'm glad I saved this recipe for Friday so we could end this week of experimental dinners on a high note. ?
This is one of the first vegan recipes my husband and I ever tried! Now we use this recipe often. I also now use your chicken and your cheddar cheese. Soooo good! Both my girls, 2.5 & 4.5, love it!
